Chorizo & Mushroom Pasta

Due to the countless requests I’ve received for this recipe (actually, 4 ra jud bitaw), I’ve finally found the time to type this. Pasta is one of my favorite things to make as there are so many possible end dishes. You’ll most likely be able to cook something using whatever ingredients you have at home, which is exactly how this Chorizo & Mushroom Spaghetti came to be. Pero char lang. 4oo grams spaghetti
2 tablespoons olive oil
8 pieces chorizo, removed from their casings (I used Tuding’s) (and no, this is not a sponsored post) (although I wish it was)
half a head of garlic; diced
one medium white onion; diced
1 cup button mushrooms; sliced
400 grams crushed tomatoes
3 tablespoons brown sugar
2 teaspoons oregano
1 teaspoon thyme
1 teaspoon cayenne pepper
1 cup cream
salt & pepper; to taste
Parmesan cheese


Cook the pasta according to package directions. Sharo na man sad di ka kibaw unsaon diba? Charot.

While the pasta is cooking, heat the oil in another pan, add the chorizo pieces, and separate them into crumbles. When fat is rendered, remove chorizo from pan and set aside. Using the same pan over medium heat, saute garlic and onion for about 2 minutes, and then saute the mushrooms for another 3 minutes. Return the chorizo crumbles back to the pan, and then add the tomatoes, brown sugar, oregano, thyme & cayenne pepper. Let simmer for 10 minutes, mix in the cream, salt & pepper, and simmer for 2 more minutes.

Add the cooked (and drained pud ha, ayaw intawn apila ang tubig) pasta to the pan, and mix everything together. Top with parmesan cheese and parsley (if feel nimo).
